深圳新聞網(wǎng)2023年9月28日訊(記者 金洪竹 張玲 閻思遠(yuǎn) 馮牧原 李丹璐 鐘亞萍 實(shí)習(xí)生 張安琪 鄭佳怡)月餅飽裝棗肉餡,甜果新谷漸登場。中國人最珍視的闔家團(tuán)圓節(jié)日有兩個,一個是春節(jié),一個就是中秋節(jié)。在深圳大學(xué)讀書,來自哈薩克斯坦的Aldiyar和來自德國的Timo來到了深圳寶安區(qū)福永拜師,他們有兩個中秋節(jié)學(xué)分要完成:學(xué)做鳳凰山月餅,舞動福永醒獅。

There are two most cherished family reunion festivals in China, one is the Spring Festival and the other is the Mid-Autumn Festival. During the Mid-Autumn Festival, people would eat mooncake stuffing with sweet dates or savory meat.

While the Mid-Autumn Festival is around the corner, two international students from Shenzhen University, Aldiyar from Kazakhstan, and Timo from Germany, were looking for a “Master” in Bo'an Shenzhen. They had two “missions” to complete: making Phoenix Mountain style mooncakes, learning to do Fuyong Style lion dance.

此次體驗(yàn)做月餅的地點(diǎn)位于深圳寶安區(qū)福永鳳凰山素菜館,環(huán)境清幽, 古色古香。(張玲 攝)

謝巧平(鳳凰山素菜館總廚)接下了這兩位徒弟,親自傳授月餅制作技能。鳳凰山月餅屬于傳統(tǒng)的廣式月餅,純素餡,轉(zhuǎn)化糖漿是它的靈魂。1斤面粉配7兩糖漿,再加3兩花生油和8克堿水……揉啊揉,面團(tuán)成型,靜候2小時,就可以包月餅了。

Master Qiaoping Xie who is the main chef at the Phoenix Mountain Vegetarian Restaurant has accepted Aldiyar and Timo as apprentices. Master Xie taught them how to make Phoenix Mountain style mooncake, a traditional Cantonese Style mooncakes with vegetarian filling highlights with golden syrup.

They mixed and kneaded the dough made of 500 grams of flour, 350 grams of the golden syrup, 150 grams of peanut oil and 8 grams of lye water. After waiting for two hours, they stared to stuff the dough with red bean paste or dates paste.

月餅皮裹住餡兒了,現(xiàn)在它被團(tuán)成了一個個小圓球,待會兒要送去廚房壓花。(張玲 攝)

裹入紅豆餡、棗泥餡,用模具壓出餅皮花紋,刷上蛋液,放入烤爐烤20分鐘左右,香噴噴的月餅就好了。

Next, they used a mold to create beautify pattern on the mooncake, and brushed their surface with egg-wash. Baked in the oven for 20 minutes, and the delicious mooncakes were ready to be served. 

自己做的月餅就是好吃,嘖嘖,紅豆餡的月餅大受歡迎,Timo笑著說,"這些歸我了!"。

These self-made mooncakes tasted phenomenal! The most popular ones were the red-bean stuffed. Timo smiled and said “They're all mine!”
